Edinson Luis Estela Chilcón is 36 years old and has worked in coffee since he was 14. His 1.5 hectare farm sits at 1650 metres in San Francisco, Huabal district, Peru. He grows Catuai, Pacamara and Gesha. In the 2025 harvest he produced around 50 quintales.
This lot is a classic natural Gesha. After careful cherry selection, the coffee is dried as a whole fruit. The skin and pulp remain around the seed during drying, allowing sugars and fruit compounds to migrate slowly into the bean. The result is expressive but clean. In the cup you can expect floral aromatics, ripe stone fruit, red berries and a bright, high altitude acidity. Elegant, layered and precise.
Operation and Perspective
Most of the work on the farm is done by Edinson and his family, with additional pickers during harvest. Over the past two years he invested heavily in quality. He built his own small wet mill set up with tanks and a solar parabolic dryer, moved into a house on the farm and replanted sections with Pacamara and Gesha to push cup quality further.
Farm management includes structured shade pruning, a mix of organic and mineral fertilisation and targeted control of coffee borer and leaf rust. Current challenges are climate variability, increasing pest pressure and limited harvest labour. Strong cup scores this season allowed him to secure better prices and receive client visits at origin. His goal for the next two to three years is clear: raise cup scores further while maintaining stable productivity and quality.
