Farm
Ethiopian coffee production is shaped by the country’s three main seasons. The Bega season (October-January) is the dry period, crucial for coffee harvesting and processing. The Belg season (February-May) brings the first rains, essential for coffee flowering and early fruit development. The Krempt season (June-September) sees heavy rainstorms, important for the later stages of fruit ripening. By September’s end, the rains stop, allowing the coffee cherries to ripen, and the harvest begins in November.
The Lalesa Washing Station in Gedeb processes coffee grown under shade trees, primarily Ensete (false banana trees). The cherries are sourced from local farmers, with initial processing involving flotation to remove any defects. The coffee then dries on beds for four days to enhance its mucilage content before being pulped and dried under shade for 18-20 days. Once processed, the coffee is stored at Moplaco in Gerji, Addis Ababa, and transported to Djibouti by train for export.

Ephtah Specialty Coffee is committed to supporting farmers and their communities. The company provides initial payments upon receipt of coffee, quality premiums, and second payments, along with assistance for school fees. Ephtah is focused on empowering women in the coffee industry, recognizing their critical role in Ethiopia’s social and economic development.
The Ama Commitment scheme is part of Ephtah’s long-term plans, along with infrastructure investments such as water tanks for flotation, more drying beds, and increasing crop diversity to support local markets. The Lalesa washing and drying facility is the largest in the region, reinforcing Ephtah’s commitment to quality and capacity in coffee production.
The company employs 20 permanent and 250 seasonal workers during harvest, and the harvest season runs from late November to January.
